ZUCCHINI BANANA DROP DONUTS

INGREDIENTS FOR DONUTS

  • 2 Zucchinis, shredded

  • 2 Bananas, mashed

  • 1/4 cup of honey

  • 1/4 cup of white granulated sugar

  • 1/4 cup of light brown sugar

  • 1/4 cup of olive oil (any oil will work)

  • 1 Tbsp of vanilla extract

  • 2 eggs, room temperature

  • 2 cups of all purpose flour

  • 1 tsp kosher salt

  • 1 tsp of baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp cardamom

  • 1 tsp nutmeg

  • Canola oil (for frying)


INGREDIENTS FOR GLAZE

  • 1 1/2 cups of powdered sugar

  • 2 Tbsp of whole milk

  • 1 Tbsp vanilla extract


DIRECTIONS

  1. Start by shredding then zucchinis with a box grater, the using a kitchen towel ring out the excess moisture. Set aside until needed.

  2. In the bowl of your stand mixer fitted with a paddle attachment combine and mix together the bananas, honey, sugars, oil and vanilla extract. Once mixed together, add in your eggs one at a time, mixing to fully incorporate.

  3. Now, in a separate medium sized bowl mix together your dry ingredients; flour, baking soda, baking powder, salt, cinnamon, cardamom and nutmeg. whisk together then slowly incorporate into the wet ingredients one scoop at a time. Mix until the batter is smooth.

  4. When the batter is done remove the bowl from the stand mixer and hand mix in the shredded zucchinis. Try not to over mix the batter.

  5. Next, prepare the glaze by adding all the ingredients into a small bowl and mixing together until its smooth and drips easily. ( TIP: If it’s too think add some more milk, if it’s too thin add some more powdered sugar).

  6. Now you are ready to fry up those donuts! In a small, heavy bottom pot, set over medium heat bring about 2 in. of conola oil to temperature, about 350 degrees F.

  7. Then, with a tiny ice cream scooper (or two teaspoons ) drop in 3 to 4 donuts into the hot oil, make sure to not overcrowd the pot. Fry for 1-2 minutes, until golden brown on the outside and cooked all the way through (I say 1-2 minutes because it will vary with the amount of batter you will be dropping in per donut. Im using a tiny ice cream scooper, so it’s the same size each time. That amount of batter took about 1 min to cook all the way through. This time will vary so test out a few before you commit to a “fry time” for your whole batch).

  8. Place the fried donuts onto a plate lined with a paper towel to catch all the excess grease.

  9. Time to glaze! Using two forks toss around one donut at a time into the glaze, then let rest on a rack to dry. (OPTIONAL: dust with powdered sugar).
