KOOKOO SABZI

INGREDIENTS

  • 2 Tbsp avocado oil + 1/4 cup

  • 6 eggs

  • 1 can of Sadaf Sabzi Kookoo Mix

  • 1 yellow onion, thinly Sliced

  • 3 green onions, thinly sliced

  • 4 garlic cloves, minced

  • 1 Tbsp minced fresh tarragon

  • 6 large fresh basil leaves, thinly sliced

  • 1 tsp turmeric

  • 1 tsp ground black pepper

  • 1 tsp coarse kosher salt

  • 1 Tbsp APF (all purpose flour)


DIRECTIONS

  1. Start off by rehydrating your dry herb mix in a bowl of luke warm water for about 10 minutes. Once rehydrated, squeeze out all of the water. Set aside until needed.

  2. Next, In a med size non-stick fry pan add in 1-2 Tbsp of avocado oil and your sliced onions over medium-high heat. Saute the onions for 3-5 minutes, then lower the heat to medium.

  3. Now add in the minced garlic and saute over medium heat for 3 minutes.

  4. Next, add in your fresh herbs; basil, tarragon and thinly sliced green onions. Saute for 3 minutes on medium heat. Then turn off the heat and set aside until needed.

  5. Now, in a medium bowl combine together the rehydrated herb mix with the caramelized onion, garlic and fresh herb mix.

  6. Next, whisk your eggs in a seperate bowl with the salt, pepper, turmeric, and flour. Whisk until frothy bubbles form, this ensures a fluffy Koo Koo Sabzi (herb frittata).

  7. Now, combine the whisked eggs with the herb and onion mixture until well combined.

  8. Next, In a clean non-stick pan over medium high heat add in 1/4 cup avocado oil. Wait until the oil is hot (not smoking) then top with the herb and egg mixture. Spread the mixture evenly around the pan, lower the heat to medium-low, then cover and let cook for 20 minutes.

  9. Now, remove the lid and section the mix into 4 slices before flipping each piece to brown the other side. Then cover and cook for another 10 minutes, or until browned on the bottom.

  10. Serve and Enjoy! Can be garnished with dried berries, nuts and fresh herbs.
