GREEN GODDESS ZOODLES

INGREDIENTS

  • 2 lemons juiced 

  • 2 Avocado 

  • 1 cup spinach

  • 3 cloves garlic

  • 1 bundle (1 ½ cups) Cilantro

  • ½ cup Basil

  • ½ cup tarragon

  • ½ tsp of pepper

  • 1 tsp kosher salt 

  • 3 tbsp olive oil 

  • Sprinkle of Vegan Parmesan

  • 4 cups of  Zoodles 

  • (2 cups spiralized zucchini noodles , 2 cups spiralized  squash noodles)

  • 1 cup vegetable broth 

  • 1 cup heirloom cherry tomatoes 


DIRECTIONS

  1. Place cherry tomatoes on baking sheet, spray with Olive Oil, and season with salt and pepper.

  2. Place in the oven at 400 degrees for 20 minutes, or until blistered.

  3. Add all ingredients for the Green Goddess Dressing in the food processor and blend together. (2 juiced lemons, 2 chopped avocados, 1 cup spinach, 3 cloves garlic, 1 bundle (1 ½ cups) Cilantro, ½ cup Basil, ½ cup tarragon. ½ tsp of pepper, 1 tsp kosher salt, 3 tbsp olive oil).

  4. To cook the Zoodles, heat the vegetable broth on medium high heat until it comes to a boil. Once it boils add in the zucchini and squash noodles and cook for 3-4 minutes or until desired texture (slightly softened with a bite).

  5. Drain the zoodles and place in a serving bowl.

  6. Add 6 Tbsp of the Green Goddess Dressing and mix together (the reminder can be saved and used for other dishes) .

  7. Top with blistered cherry tomatoes & sprinkle with vegan parmesan.

  8. Enjoy!!
