COCONUT PESTO CHICKEN KABOBS
- 1 1/2 cups of fresh basil
- 1/4 of a cup of Marcona Almonds
- 4 garlic cloves
- 1/4 cup of grated vegan parmesan cheese
- 1 tsp of Himalayan salt
- 1/4 cup of coconut oil
- 1 tbs nutritional yeast

- Start off by combining all the ingredients (except the chicken) into a food processor until smooth.
- Next, combine the pesto and cubed chicken in a large mixing bowl and toss together to coat the chicken evenly.
- Now, place 4 cubed Chicken pieces on each skewer, you can add any vegetable of your choosing in-between each piece of chicken.
- Cook on a grill for 12-15, or until fully cooked.
