COCONUT PESTO CHICKEN KABOBS

INGREDIENTS

  • 1 1/2 cups of fresh basil 
  • 1/4 of a cup of Marcona Almonds 
  • 4 garlic cloves
  • 1/4 cup of grated vegan parmesan cheese
  • 1 tsp of Himalayan salt
  • 1/4 cup of coconut oil
  • 1 tbs nutritional yeast

DIRECTIONS

  1. Start off by combining all the ingredients (except the chicken) into a food processor until smooth.
  2. Next, combine the pesto and cubed chicken in a large mixing bowl and toss together to coat the chicken evenly. 
  3. Now, place 4 cubed Chicken pieces on each skewer, you can add any vegetable of your choosing in-between each piece of chicken. 
  4. Cook on a grill for 12-15, or until fully cooked.
